Rolled Roasted Pork Belly.
- 1 .7 kg - pork belly (deboned)
- 3 tsp bbq spice
- 50 ml basil pesto
- 4 clove garlic minced
- 1 salt and pepper to taste
- Score the fat of the pork belly.
- Only half cut into the fat.
- Cuts must be parallel with each other
- Turn the pork belly around, fat down on a dry surface
- Mix together all the ingredients and rub on meat side of the pork belly
- Roll up the meat and tie with string
- Rub the fat with a good amount of salt
- Put in a gas rotisserie spit or oven with a rotisserie on high heat for 30 minutes
- Turn heat down to medium for a further 60 minutes
- Sprinkle a little more salt on meat and cook for a further 90 minutes
- Rest for 20 minutes while still on rotisserie
