Rolled Roasted Pork Belly.

  1. Score the fat of the pork belly.
  2. Only half cut into the fat.
  3. Cuts must be parallel with each other
  4. Turn the pork belly around, fat down on a dry surface
  5. Mix together all the ingredients and rub on meat side of the pork belly
  6. Roll up the meat and tie with string
  7. Rub the fat with a good amount of salt
  8. Put in a gas rotisserie spit or oven with a rotisserie on high heat for 30 minutes
  9. Turn heat down to medium for a further 60 minutes
  10. Sprinkle a little more salt on meat and cook for a further 90 minutes
  11. Rest for 20 minutes while still on rotisserie
