Smoked Cheese And Scallion Muffins Recipe
- 2 c. all-purpose flour
- 1 tbsp. baking pwdr
- 3/4 teaspoon salt
- 1/4-1/2 teaspoon freshly grnd black pepper
- 1/4 teaspoon dry thyme leaves, crushed
- 1 lg. egg
- 1 c. lowfat milk
- 1/2 c. minced fresh tomato
- 1/4 c. thinly sliced scallions
- 4 ounce. smoked Gouda, Provolone or possibly Mozzarella, cut into 1/4-inch dice
- 4 tbsp. (1/2 stick) butter, melted
- Heat oven to 375 degrees.
- Grease muffin c.; don't use paper or possibly foil baking c..
- Thoroughly mix flour, baking pwdr, salt, pepper and thyme in a large bowl.
- Whisk egg and lowfat milk in a medium-size bowl.
- When egg is well broken up, stir in tomatoes, scallions, cheese and butter.
- Pour over dry ingredients and mix in with a rubber spatula just till dry ingredients are moistened.
- Scoop batter into muffin c.. Bake 25-30 min or possibly till browned.
- Turn out onto a rack to cold.
- Yield: 12 muffins (good with soup).
