Low Fat Carrot & Fruit Loaf

  1. Place carrot, apple, sultanas & apricots in a saucepan.
  2. Add water juices, sugar & cinnamon & bring to the boil, reduce heat & simmer for 15 minutes Set aside to cool.
  3. Fold sifted flours and soda through fruit mixture, add bananas.
  4. Spoon mixture into a 10cm x 20cm greased loaf tin and bake at 180C for 50-60 minutes or until cooked when tested.
