Sweet Potato Pie

  1. Boil sweet potatoes until tender.
  2. Peel and mash.
  3. Add egg yolks, nutmeg, salt and brown sugar.
  4. Beat mixture until it is creamy.
  5. Turn into pastry-lined 8" pie pan.
  6. Bake in hot (400F.)
  7. oven until crust browns, 20-25 minutes.
  8. Top with meringue made by beating egg whites with powdered sugar until mixture holds its shape.
  9. Brown lightly in a slow (300F.)
  10. oven.
