Chicken fillets with caramalised onion and melted cheese

  1. Heat the oil in a large pan with the chilli flakes
  2. Add the onions.
  3. Stir well
  4. Cover and leave over a low heat for 15 minutes
  5. Take the cheeses out of the fridge
  6. Make two similar sized portions (you don't have to take notice of the grams in ingredients - less is fine and more is too).
  7. After 15 minutes, uncover the onion pan, add a slosh of white wine and turn the heat up for 5 minutes.
  8. While you're waiting, grate the cheese
  9. Grease the oven tray.
  10. Cut the lemons into really thin slices and dot them around the tray.
  11. Sprinkle with oregano
  12. Grill the chicken fillets in a pan with a little oil.
  13. Turn the oven on high at 200As
  14. Put the fillets on the oven tray, on top of the lemon slices
  15. Cover with the onion
  16. And grated cheese
  17. Place in the oven at 200AS for 5 minutes
  18. Turn the grill on at maximum for 2 minutes more
  19. Put on a warmed plate and serve with a green salad.
