Lemon Lime Pie
- 20 small vanilla wafer cookies
- 1 pkg. low calorie lime-flavored gelatin
- 1 c. boiling water
- 3 oz. frozen lemonade
- 1/2 c. cold water
- 1 Tbsp. lime juice
- 1 Tbsp. lemon juice
- 1 c. evaporated skim milk
- Line 9-inch pie pan with vanilla wafer crumbs.
- Dissolve lime gelatin in boiling water and add frozen lemonade and cold water. Chill until almost set.
- Chill milk, bowl and beaters for several hours before whipping milk.
- Fold whipped milk into partially set gelatin, add lemon juice, put in crumb lined pan and chill until set.
- Serve with sugar-free low-fat topping.
