French 75

• ice
• 1 1/2 oz. VSOP Cognac
• 1/2 oz. Simple Syrup
• 1/2 oz. fresh lemon juice
• Sparkling wine

1. Fill a cocktail shaker with ice.
2. Add the cognac, simple syrup, and lemon juice and shake well.
3. Strain into a martini glass, top with sparkling wine, and serve.
