Creamed Eggs Chartres Recipe

  1. Heat 9 inch skillet over medium heat.
  2. Saute/fry onion in butter till transparent.
  3. Stir in flour and cook slowly 3 to 5 min more.
  4. Blend in lowfat milk and egg yolk till smooth.
  5. Add in salt and pepper.
  6. Cook stirring constantly 8 to 10 min or possibly till sauce thickens.
  7. Remove from heat, add in sliced Large eggs and mix lightly.
  8. Spoon into 2 (8 ounce.)
  9. casseroles and sprinkle lightly with paprika and Parmesan cheese.
  10. Mix together.
  11. Place in oven till heated.
  12. Garnish with egg slices.
