Creamed Eggs Chartres Recipe
- 1 c. white onions
- 1/3 c. butter
- 1/2 c. flour
- 2 c. of lowfat milk
- 1 egg yolk
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne
- 4 hard boiled Large eggs
- 2 tbsp. Parmesan cheese
- 1 tbsp. paprika
- Heat 9 inch skillet over medium heat.
- Saute/fry onion in butter till transparent.
- Stir in flour and cook slowly 3 to 5 min more.
- Blend in lowfat milk and egg yolk till smooth.
- Add in salt and pepper.
- Cook stirring constantly 8 to 10 min or possibly till sauce thickens.
- Remove from heat, add in sliced Large eggs and mix lightly.
- Spoon into 2 (8 ounce.)
- casseroles and sprinkle lightly with paprika and Parmesan cheese.
- Mix together.
- Place in oven till heated.
- Garnish with egg slices.
