Creamed Spinach
- 4 tablespoons butter
- 4 tablespoons flour
- 14 teaspoon salt
- 1 cup whole milk or 1 cup cream
- 4 tablespoons butter
- 2 tablespoons finely chopped onions
- 16 ounces frozen chopped spinach
- white sauce
- 12 cup sour cream
- salt
- pepper
- sliced tomatoes (optional)
- sliced provolone cheese (optional)
- To prepare white sauce:
- Melt butter, add flour and salt.
- Whisk continuously for about 5 minutes or until you have a nice roux.
- Slowly add milk or cream, stirring until thick.
- To prepare creamed spinach:
- Melt butter in a pan, add onion.
- Saute for 2 minutes.
- Add spinach (frozen or thawed) and cook until spinach is thawed and warm.
- Add white sauce and sour cream.
- Season to taste with salt and pepper.
- At this point, you can get really fancy and top with sliced provolone and tomatoes and stick under the broiler for a few minutes.
- Note: I have used whole wheat flour to make the white sauce with no bad effects.
