Tomatillo Salsa

  1. Remove dry outer skin from the tomatillos.
  2. Bring pot of water to boil; add tomatillos and serranos and blanch for 1 to 2 minutes.
  3. Drain; then cool under running water.
  4. Blot dry.
  5. Combine tomatillos, chiles, onion, garlic, and cilantro in blender; process on slow speed until desired consistency is reached.
  6. Add salt and pepper to taste.
