Tomatillo Salsa
- 8 tomatillos
- 3 serrano chilies
- 12 large sweet onion
- 1 small garlic clove
- 10 cilantro leaves
- salt
- ground black pepper
- Remove dry outer skin from the tomatillos.
- Bring pot of water to boil; add tomatillos and serranos and blanch for 1 to 2 minutes.
- Drain; then cool under running water.
- Blot dry.
- Combine tomatillos, chiles, onion, garlic, and cilantro in blender; process on slow speed until desired consistency is reached.
- Add salt and pepper to taste.
