pesto & ricotta chicken

  1. mix pesto & ricotta in small bowl, blend well
  2. cut deep slit in each chicken breast
  3. spoon ricotta mix in chicken slit; reshape and close flap
  4. place chicken on plate & let chill for 30 mins
  5. vinaigrette- pour olive oil in blender or food processor add chives & process til smooth
  6. move mixture to bowl add tomatoes & lime juice.
  7. season with salt & pepper
  8. after letting sit for 30 minutes: brush chicken with olive oil?
  9. & season.
  10. grill on hot bbq for 8 minutes on each side or until done
  11. transfer to plate, top with vinaigrette and serve
  12. u can serve with salda, light pasta or rice
  13. ENJOY!
