pesto & ricotta chicken
- 1 tbsp pesto
- 4 oz ricotta
- 4 boneless chicken breast
- 1 tbsp olive oil
- 1 pepper
- 1/3 olive oil
- 1 bunch fresh chives
- 2 oz tomatoes, peeled, seeded & chopped
- 1 lime
- 1 salt
- 1 pepper
- mix pesto & ricotta in small bowl, blend well
- cut deep slit in each chicken breast
- spoon ricotta mix in chicken slit; reshape and close flap
- place chicken on plate & let chill for 30 mins
- vinaigrette- pour olive oil in blender or food processor add chives & process til smooth
- move mixture to bowl add tomatoes & lime juice.
- season with salt & pepper
- after letting sit for 30 minutes: brush chicken with olive oil?
- & season.
- grill on hot bbq for 8 minutes on each side or until done
- transfer to plate, top with vinaigrette and serve
- u can serve with salda, light pasta or rice
