Pancit (Filipino)
- 2 chicken breasts
- 2 pork chops
- water (enough to cover for broth)
- 2 carrots, cut into strips
- 1/2 small cabbage, thinly cut
- 2 stalks celery, thinly sliced
- a handful snow peas
- a handful string beans
- 1/2 c. chopped onion
- 2 Tbsp. soy sauce
- 2 cloves garlic, crushed
- 1 tsp. salt
- 1 green pepper, cut into strips
- a handful shrimp (optional)
- 1 pkg. Pancit Kanton noodles or rice noodles (Asian store or Giant)
- Boil chicken breasts and pork together.
- Reserve broth.
- Cut into cubes or strips.
- Saute garlic, onions and meat in oil.
- Add remaining vegetables.
- Season with salt and soy sauce.
- Put vegetables aside.
- Add noodles to broth and cook to medium soft. Add the vegetables and meat and mix.
- Do not overcook.
- Serve hot. Pancit should not have a lot of liquid when serving.
