Cinnamon Rolls(Approximately 20 Rolls)
- 1 c. low-fat Ricotta or cottage cheese
- 1 c. plus 2 Tbsp. chilled butter
- pinch of salt
- 1/4 tsp. vanilla
- 2 c. flour
- 1 tsp. baking powder
- 3/4 c. raisins
- 1/3 c. ground nuts (your choice)
- 1 tsp. cinnamon
- 1/3 c. sugar
- 1 1/2 c. powdered sugar
- 1/2 tsp. vanilla
- 3 or 4 Tbsp. milk
- Drain cheese.
- Cut 1 cup, plus 1 tablespoon of butter into flakes.
- Add cheese, salt, vanilla, flour and baking powder.
- Knead on floured surface.
- Wrap in aluminum foil and chill 1 hour.
- Roll out to 16 x 24-inch rectangle.
- Melt 1 tablespoon butter; brush on dough.
- Wash the raisins in hot water.
- Mix ground nuts, cinnamon and sugar.
- Spread mix on dough, then add raisins.
- Roll up dough, starting with small end.
