Gluten Free Streusel Topped Sweet Potato Casserole

  1. Preheat oven to 375F
  2. Grease an 11 x 7 in.
  3. pan
  4. Place potatoes in a pot with just enough water to cover
  5. Bring to a boil, then let cook for 15 min.
  6. Drain potatoes and mash
  7. Add milk, syrup, salt and egg
  8. Blend, then spoon into pan and set aside
  9. Combine flour, sugar and cinnamon
  10. Add butter and mix until crumbly
  11. Sprinkle evenly over potato mixture
  12. Cover with foil and bake for 15 min.
  13. Uncover and bake for an additional 25 min.
