Gluten Free Streusel Topped Sweet Potato Casserole
- 6 cup Sweet potatoes (peeled and cubed)
- 1/4 cup Milk
- 1/4 cup Maple syrup
- 1 tsp Salt
- 1 Egg (lightly beaten)
- 1/4 cup Brown rice flour
- 1 cup Brown sugar
- 1 tsp Cinnamon
- 2 tbsp Butter
- Preheat oven to 375F
- Grease an 11 x 7 in.
- pan
- Place potatoes in a pot with just enough water to cover
- Bring to a boil, then let cook for 15 min.
- Drain potatoes and mash
- Add milk, syrup, salt and egg
- Blend, then spoon into pan and set aside
- Combine flour, sugar and cinnamon
- Add butter and mix until crumbly
- Sprinkle evenly over potato mixture
- Cover with foil and bake for 15 min.
- Uncover and bake for an additional 25 min.
