Citrus and Cinnamon Couscous
- 1 34 cups couscous
- 14 cup orange juice concentrate
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 12 teaspoon cinnamon
- salt
- 2 12 cups boiling water
- 12 cup chopped parsley
- 12 cup chopped green onion
- 12 cup chopped mint
- pepper
- 2 large navel oranges, diced
- Put couscous, juice concentrate, lemon juice, olive oil, cinnamon and salt to taste in a large mixing bowl and stir.
- Add boiling water, stir to mix and cover.
- Allow to rest about 10 minutes, or until all water is absorbed.
- Fluff with a fork.
- Stir in greens and pepper to taste.
- Add oranges and toss to mix.
- Serve at room temperature.
