Cherry Cookies
- 1/3 c. shortening
- 1/2 c. sugar
- 1 egg, well beaten
- 1 tsp. grated lemon rind
- 1 tsp. vanilla
- 1 1/2 Tbsp. maraschino cherry juice
- 1 c. flour
- 1/4 tsp. salt
- 1/4 tsp. soda
- 1/2 tsp. baking powder
- 1/2 c. chopped nuts
- 1/2 c. chopped raisins
- 1 c. crushed corn flakes
- 24 maraschino cherries
- Cream shortening and sugar thoroughly; add egg, lemon rind, vanilla and cherry juice.
- Beat well.
- Add sifted dry ingredients, then raisins and nuts.
- Drop from teaspoon into crushed cereal, roll into balls, coat well and top with maraschino cherries.
- Bake on greased cookie sheets in hot oven (400u0b0) about 10 minutes or until delicately browned.
- Recipe makes two dozen.
