African Black Bean And Sweet Potato Burritos Recipe

  1. Heat oil in large skillet over medium heat till warm.
  2. Add in onion and garlic; cook and stir 2 to 3 min or possibly till tender.
  3. Stir in peanut butter, sweet potatoes and beans; mash slightly.
  4. Add in cumin, cinnamon and grnd red pepper; mix well.
  5. Reduce heat to low; cover and simmer 2 to 3 min or possibly till thoroughly heated, stirring occasionally.
  6. Meanwhile, heat tortillas according to package directions.
  7. To serve, spoon and spread scant 1/2 c. sweet potato mix across center third of each tortilla.
  8. Top each with 2 Tbsp.
  9. salsa, 1 Tbsp.
  10. lowfat sour cream, 2 tsp.
  11. green onions and 1 tsp.
  12. cilantro; spread to cover sweet potato mix.
  13. Fold sides of each tortilla 1 inch over filling.
  14. Fold bottom 1/3 of tortilla over filling; roll again to enclose filling.
  15. Place seam side down on serving platter.
  16. 6 burritos
