Easy Chocolate Pudding

  1. Lightly beat egg with a fork in a medium bowl.
  2. Whisk together 1 1/2 cups milk, 13 cup sugar and salt in a medium saucepan, bring to a gentle boiling or simmer over medium heat, stirring frequently.
  3. Meanwhile, add the remaining 13 cup sugar, cocoa and cornstarch in another medium bowl, and whisk until well mixed.
  4. Pour in the remaining 3/4 cup milk, whisk until well mixed.
  5. Whisk the simmering milk mixture into the cocoa mixture.
  6. Pour the mixture back into the pan and bring to a simmer over medium heat, whisking frequently, until thickened and glossy, 2 to 4 minutes.
  7. Remove from heat.
  8. Whisk about 1 cup of the hot cocoa mixture into the beaten egg.
  9. Bring the egg mixture back to the pan and cook over medium-low heat, whisking frequently, until steaming and thickened, 1 to 3 minutes.
  10. (Do not let boil.)
  11. Whisk in vanilla.
  12. Serve warm or chilled.
