Easy Chocolate Pudding
- 1 large eggs
- 2 1/4 cups milk low-fat or skim, divided
- 23 cup sugar divided, slpenda is not recommended here
- 18 teaspoon salt
- 23 cup cocoa powder unsweetened, sifted
- 2 tablespoons cornstarch sifted
- 1 teaspoon vanilla extract
- Lightly beat egg with a fork in a medium bowl.
- Whisk together 1 1/2 cups milk, 13 cup sugar and salt in a medium saucepan, bring to a gentle boiling or simmer over medium heat, stirring frequently.
- Meanwhile, add the remaining 13 cup sugar, cocoa and cornstarch in another medium bowl, and whisk until well mixed.
- Pour in the remaining 3/4 cup milk, whisk until well mixed.
- Whisk the simmering milk mixture into the cocoa mixture.
- Pour the mixture back into the pan and bring to a simmer over medium heat, whisking frequently, until thickened and glossy, 2 to 4 minutes.
- Remove from heat.
- Whisk about 1 cup of the hot cocoa mixture into the beaten egg.
- Bring the egg mixture back to the pan and cook over medium-low heat, whisking frequently, until steaming and thickened, 1 to 3 minutes.
- (Do not let boil.)
- Whisk in vanilla.
- Serve warm or chilled.
