Norwegian Blotkake(Wet Cake)
- 4 eggs
- 1 c. flour
- 1 (10 oz.) pkg. frozen strawberries (fresh strawberries, raspberries or kiwi may be substituted for frozen berries)
- 1 Tbsp. cornstarch
- 1/2 c. pineapple juice
- 1 (15 1/2 oz.) can crushed pineapple
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. almond extract
- 1 tsp. butter
- 2 c. cream, whipped
- apricot jam (optional)
- additional strawberries
- Beat eggs and sugar until light or pale yellow in color. Combine flour and baking powder; stir in slowly (add gradually). Stir in almond extract.
- Pour batter into a 9-inch buttered and floured spring-form pan.
- Bake in preheated 350u0b0 oven for 30 minutes.
- Set aside to cool.
