Bernie Lithamol Ravioli Recipe
- 2 x Thick slices bread, as breadcrumbs
- 1 x Egg
- 75 gm Smoked salmon
- 2 sht tomato pasta sheets
- 5 sm Tomatoes, minced
- 1 handf spinach, shredded
- 1 dsh Tabasco
- 60 ml Extra virgin olive oil *NOODLES WITH BROCCOLI AND GORGONZOLA***
- 1 head broccoli
- 4 sht basil pasta
- 100 ml White wine
- 1/2 x Red onion, minced
- 150 gm Gorgonzola, crumbed
- 15 ml Double cream
- 4 sht Lasagne
- 2 x Oranges
- 125 ml Double Cream
- 15 ml Sugar
- SMOKED SALMON RAVIOLI:1 Beat the breadcrumbs and egg together in a large bowl.
- Chop the salmon in a processor, add in to the bowl with the breadcrumbs and mix well.
- 2 Spoon the mix onto the pasta sheets, fold over and seal the edges with water.
- Poach the ravioli in boiling water for 8 min.
- Mix the salad ingredients together and serve with the ravioli.
- NOODLES WITH BROCCOLI AND GORGONZOLA:1 Cut the broccoli in to florets and cook in boiling water till tender.
- Cook the pasta according to the packet, drain and cut into ribbons.
- 2 Mix the cooked broccoli and pasta together.
- Heat the wine and the onion in a small pan, add in the cheese and stir till melted.
- Stir in the cream, season and serve.
- ORANGE LASAGNE:1 Cook the lasagne according to the instructions and drain well.
- Peel and slice the two oranges.
- 2 Layer the pasta and oranges in a small gratin dish pouring the cream over the orange layer, finish with oranges sprinkled with sugar.
- Oven bake for 5-10 min.
- Dredge with icing sugar to serve.
