Crunchy Almond Maple Glazed Chicken

  1. Preheat oven to 375 degrees F.
  2. Line a baking sheet with foil and lightly spritz with non-stick cooking spray.
  3. Set aside.
  4. Coat chicken pieces in 2 tablespoons of melted butter.
  5. Place on baking sheet and sprinkle with salt and pepper.
  6. Pour Chex cereal into a food storage bag and smash into small pieces.
  7. Chop almonds into small pieces.
  8. Place crushed cereal, almonds, salt, pepper and 2 tablespoons melted butter into a small bowl and stir to coat.
  9. Divide topping into 4 equal portions and press onto the tops of the chicken breasts to create a thick crust.
  10. Bake 30 minutes or until chicken is thoroughly cooked.
  11. Pour syrup and last 1 tablespoon butter into a small bowl and microwave until butter melts.
  12. Stir mixture with a spoon to incorporate the melted butter into the syrup.
  13. Right before serving, drizzle about 2 tablespoons of syrup mixture over each chicken piece.
  14. Serve warm.
