Salmon with Feta Couscous

  2. Boil the water with 1 tablespoon of olive oil and the Italian seasoning in a pot.
  3. Add the couscous and stir, remove from heat and cover.
  4. After you cook the salmon and asparagus, add the feta cheese to the couscous and fluff everything with a fork.

  6. Prepare a grill pan over medium to medium-high heat.
  7. Trim the asparagus spears and put into a plastic storage bag with 1 tablespoon olive oil and 1/4 teaspoon salt and 1/4 teaspoon pepper.
  8. Seal and shake/mix around, then grill for about 5 minutes, turning occasionally.

  10. Prepare the salmon fillets by coating with remaining 1 tablespoon olive oil then sprinkling with the remaining 3/4 teaspoon salt and 3/4 teaspoon pepper.
  11. Grill on the same pan with the asparagus, 2-3 minutes per side (tip for grilling fish: you know its done when it pulls away easily from the pan).

  13. Plate everything and serve!
