Savory Vegetable Beef Soup
- 1 lb. brisket beef, neck bone or soup bone
- 2 medium carrots, scraped
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 1 ear corn, cut
- 1/2 c. green beans, cut
- 1 c. okra
- 1 qt. canned tomatoes
- 6 pieces elbow macaroni
- 1 tsp. ground oregano
- 1 tsp. thyme
- 1 tsp. cumin
- 2 small garlic cloves, crushed
- black pepper
- garlic salt
- Remove all fat from meat.
- Boil until tender. Add water, if necessary. Remove from heat and strain broth.
- Refrigerate broth overnight.
- Skim off fat and heat.
- Add all vegetables which have been washed and chopped.
- Add spices and macaroni. Simmer 1 1/2 hours.
- Season to taste.
