Vegetable Pesto Pizza Recipe
- 2 tbsp. pesto sauce
- 1 c. shredded Mozzarella cheese
- 12 thin slices yellow squash
- 12 thin slices plum tomatoes
- 1 c. very sm., slightly under cooked broccoli flowerets
- 1/2 c. sliced scallions
- Heat oven to 500 degrees.
- Spread pizza dough out on pizza pan.
- Sprinkle with pesto sauce and 1/2 c. Mozzarella cheese.
- Top with squash, tomatoes, broccoli, scallions and 1/2 c. Mozzarella cheese.
- Bake 10 to 12 min till edges of crust is browned and crisp.
- Serves 2.
