Taiwanese Sweet Potato Fried Mochi
- 300 grams Sweet potato (peeled and boiled, but you can also microwave them)
- 1 tbsp Light brown sugar (add more as desired)
- 25 grams Katakuriko (or cornstarch)
- 75 grams Shiratamako
- 1 Frying oil
- Cut the sweet potato into small pieces and boil.
- It's also okay to microwave.
- Smash the sweet potatoes into a paste.
- If you want sweeter results, add light brown sugar.
- Add the katakuriko and shiratamako and mix everything together well.
- This is what it'll look like after the mixing in Step 3.
- Roll into 2-3 cm diameter balls.
- Fry the sweet potato balls in 140-160C oil for at least 2 minutes.
- If you lightly press down on them with the back of a spoon, etc.
- while frying, they'll absorb air and expand.
- Once the outsides have browned, they're done.
