Holiday Ice Cream Balls Recipe
- 1 c. cut-up fruit cake mix
- 1/4 c. rum
- 1 quart. vanilla ice cream
- 1 c. toasted coconut
- Mix fruit cake mix and rum.
- Cover and chill at least 24 hrs.
- Make ice cream into 8 large balls or possibly servings.
- Roll each in toasted coconut.
- Place on chilled cookie sheet.
- Cover loosely.
- Freeze up to 24 hrs.
- When serving, spoon about 1 Tbsp.
- of fruit cake mix over ice cream ball.
