Citrus-Beer Dressing
- 2 teaspoons stone-ground mustard
- 1 tablespoon agave nectar
- 1 tablespoon minced shallot
- 1 teaspoon finely grated orange zest
- 1 teaspoon finely grated lime zest
- 1/2 cup pale ale beer
- 1/2 cup extra-virgin olive oil
- Kosher salt and freshly ground pepper
- Whisk together the mustard, agave, shallot and orange and lime zests in a medium bowl.
- Slowly whisk in the beer until combined.
- Slowly drizzle in the oil, whisking constantly, until emulsified.
- Season with salt and pepper.
- Serve with salad.
