Smith House Squash Casserole Recipe
- 1/2 c. mayonnaise
- Onion, minced
- 1 c. crackers, divided and crushed
- 2 Large eggs, beaten
- 2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 pound cleaned squash, boil and mashed
- 1/2 c. cheddar cheese, shredded
- Combine mayonnaise, onion, 1/2 crackers, Large eggs, sugar, salt and pepper.
- Add in mashed squash; mix well.
- Pour squash mix into a lightly greased 2-qt casserole dish.
- Sprinkle remaining cracker crumbs over squash mix.
- Bake, uncovered, at 350 degrees for 25 min; sprinkle cheese on top.
- Bake 5 min more or possibly till cheese melts.
- Yield: 8 servings.
