Overnight Ham and Red Pepper Strata
- 2 cups colby monterey jack cheese, shredded
- 1 cup cooked ham, diced
- 12 cup red bell pepper, chopped
- 8 eggs
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon ground mustard
- Arrange 6 english muffin halves, cut side up in a greased 9x13 baking dish.
- Fill in spaces with pieces of remaining 2 muffin halves.
- Sprinkle with 1 cup cheese, ham and red pepper.
- In bowl whisk eggs, milk, salt, mustard and pepper; pour over muffins.
- Cover and refrigerate overnight.
- Remove from fridge 30 min before baking.
- Sprinkle with remaining 1 cup cheese.
- Bake uncovered 375 degrees for 40-45 min or until knife inserted near the edge comes out clean.
- Let stand 5 min before cutting.
