Bill's Black Bean Soup
- 1 (15 ounce) bag dried black beans
- 4 tablespoons olive oil
- 1 large yellow onion
- 5 garlic cloves
- 1 small red bell pepper
- 1 small jalapeno pepper
- 1 small ham bone or 1 small hock
- 12 cup fresh cilantro
- 12 tablespoon garlic sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- water, to cover
- 1 dash salt and pepper
- Soak dry beans in water overnight.
- Chop onion, Garlic, Bell Pepper, hot pepper and half the Cilantro and cook in olive oil till tender.
- Add all Dry spices and stir for a minute or so.
- Add Water, small Hamhock balance of Cilantro.
- Bring to a boil and cut heat to simmer.
- Cover and simmer for 5-6 hours.
- Uncover and high simmer it till broth is a half inch or so above the beans.Salt and pepper to taste.
- Serve and enjoy.
- You can also puree the soup for a different texture.
