Bill's Black Bean Soup

  1. Soak dry beans in water overnight.
  2. Chop onion, Garlic, Bell Pepper, hot pepper and half the Cilantro and cook in olive oil till tender.
  3. Add all Dry spices and stir for a minute or so.
  4. Add Water, small Hamhock balance of Cilantro.
  5. Bring to a boil and cut heat to simmer.
  6. Cover and simmer for 5-6 hours.
  7. Uncover and high simmer it till broth is a half inch or so above the beans.Salt and pepper to taste.
  8. Serve and enjoy.
  9. You can also puree the soup for a different texture.
  10. Its up to you.
