Hot Supper Salad
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 4 cloves minced garlic
- 3/4 c. picante sauce
- 1 Tbsp. lime juice and 1 Tbsp. soy
- 4 tsp. fresh shredded ginger
- 2 c. romaine lettuce
- 2 c. spinach fresh leaves
- 1 tomato, cut in thin wedges
- 1/4 c. chopped dry roasted peanuts
- 4 chopped green onions
- 4 Tbsp. fresh chopped cilantro
- wonton skins and oil
- Brown meat with garlic; drain.
- Add picante sauce, lime juice, soy and ginger.
- Cook and stir 5 minutes until sauce has thickened slightly.
- Arrange shredded lettuce and spinach on 4 plates. Spoon hot meat mixture over green.
- Garnish with tomato wedges and sprinkle peanuts, green onions and cilantro on top.
- Serve immediately.
- Serve with extra picante sauce and fried wonton chips.
