Smoked Turkey Gumbo

  1. Make
  2. dark
  3. roux
  4. (see
  5. below).
  6. Add
  7. onions
  8. and
  9. bell pepper.
  10. When
  11. onion is clear, add parsley and green onion and cook for a few minutes.
  12. Add small amount of water and stir to make thick liquid.
  13. Add garlic and celery seed.
  14. Add remaining ingredients
  15. and
  16. cover with 2 to 4 inches of water (depending on desired thickness).
  17. Bring to a boil.
  18. Lower heat and cook 2 to 4 hours.
