Smoked Turkey Gumbo
- 1 smoked turkey, boned and cut up
- Andouille (smoked sausage)
- 3 to 4 onions, chopped
- 1 c. green onion, chopped
- 1 c. bell pepper, chopped
- 1 tsp. dried mint
- 1 Tbsp. garlic, chopped
- 1 Tbsp. celery seed
- salt to taste
- 1 c. dried parsley
- 4 c. dry white wine
- 6 1/2 drops bitters
- 2 Tbsp. hot sauce
- 4 Tbsp. Worcestershire sauce
- 5 to 6 c. okra, sliced
- water
- Make
- dark
- roux
- (see
- below).
- Add
- onions
- and
- bell pepper.
- When
- onion is clear, add parsley and green onion and cook for a few minutes.
- Add small amount of water and stir to make thick liquid.
- Add garlic and celery seed.
- Add remaining ingredients
- and
- cover with 2 to 4 inches of water (depending on desired thickness).
- Bring to a boil.
- Lower heat and cook 2 to 4 hours.
