Corn, Tomato, and Shrimp Whole Wheat Pasta
- 1 pound Shrimp, Peeled And De-veined
- 1 Tablespoon Old Bay Seasoning
- 2 Tablespoons Olive Oil, Divided
- 4 Servings, Whole Wheat Spaghetti Or Angel Hair Noodles
- 1 Onion, Diced
- 5 cloves Garlic, Minced
- 1/2 cups Dry White Wine
- 1/2 cups Low Sodium Chicken Stock
- 1 teaspoon Smoked Paprika
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder
- 1/2 teaspoons Red Pepper Flakes
- 1/2 teaspoons Sea Salt
- 2 ears Corn, Roasted And Cut Off The Cob
- 1 cup Cherry Tomatoes, Cut In Half
- 1 cup Sliced Mushrooms
- 1/2 cups Parmesan Cheese, Shredded
- 1/2 cups Green Onions, diced
- Toss shrimp in old bay seasoning.
- In a large cast iron skillet over high heat, add 1 tablespoon olive oil.
- Let heat about 30 seconds, and toss shrimp into skillet.
- Sear for 3 minutes and flip.
- Sear an additional 1 minute.
- Remove from skillet, and cover to keep warm.
- Meanwhile cook pasta according to package directions.
- In the same skillet, add remaining 1 tablespoon olive oil, onions, and garlic.
- Let bloom 2 minutes.
- Deglaze the pan with white wine.
- Scrape bottom and sides well.
- Add in chicken stock, smoked paprika, pepper, garlic powder, red pepper flakes, and salt.
- Turn heat to medium, and cover.
- Let simmer for 10 minutes.
- Toss in corn, tomatoes, and mushrooms.
- Let cook about 10 more minutes.
- Give her a taste and adjust seasonings if needed.
- Once veggies are cooked, drain pasta and add to skillet along with shrimp.
- Stir well to combine.
- Serve in large bowls and top with Parmesan cheese and green onions.
