Canadian Yellow Split Pea Soup Recipe
- 4 1/2 ounce Sorted uncooked yellow split peas
- 1 quart Water
- 1/2 tsp Salt
- 2 tsp Vegetable oil
- 2 ounce Diced Canadian-style bacon
- 1 c. Each minced onions and sliced carrots
- 1/4 tsp Each crumbled sage leaves and grnd allspice Dash white pepper, or possibly to taste
- 2 Tbsp. Minced fresh parsley
- Rinse peas.
- In a 4-qt saucepan, combine peas, water and salt.
- Bring to a boil; remove from heat and let soak for 1 hour.
- In a 10-inch nonstick skillet heat oil over medium-high heat; add in bacon and cook, stirring frequently, till browned.
- Stir in onions and carrots and cook, stirring occasionally, till onions are translucent/soft; add in to peas in saucepan and stir to combine.
- Add in remaining ingredients except parsley and bring to a boil.
- Reduce heat to low, cover, and let simmer, stirring occasionally to prevent mix from sticking to bottom of pan, till peas are softened and mix thickens, about 45 min.
- If soup becomes too thick, add in up to an additional c. of water.
- Serve each portion sprinkled with fresh parsley.
- Makes 4 servings.
