Red Beans And Rice

  1. Rinse
  2. beans;
  3. soak
  4. overnighttn
  5. water.
  6. Heat
  7. bacon drippings in large frypan.tdd onion and green pepper.
  8. Saute until
  9. tender.
  10. Remove
  11. beans.
  12. Add
  13. water to soaking water to equal
  14. 2 1/2 quarts.
  15. Pour in frypan.
  16. Add beans, pork, garlic and bay leaf.
  17. Simmer over low 3 to 4 hours or until beans are tender. Add
  18. parsley,
  19. salt
  20. and
  21. pepper to taste.
  22. Cook rice separately according to package directions.
  23. Serve beans over hot cooked rice.
  24. Makes 6 servings.
