Eggless Chocolate Cake
- 1 cup Flour
- 1 cup Powdered sugar
- 1/2 cup Coca powder
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1/2 cup Veg. Oil
- 1/2 cup Hot water
- 1/2 cup Milk
- 1 tsp Vanilla extract
- 2 tbsp Greek yogurt
- 2 tbsp Unsalted butter
- 3 tbsp Ricotta cheese
- 2 tbsp Light brown sugar
- 1 tsp Cinnamon
- 1 tsp Vanilla extract
- Preheat the oven at 180 C degrees
- Grease a baking tin
- In a bowl sift together all the dry ingredients
- In a separate bowl whisk together the oil and hot water until well blended a let cool for a couple of mins
- When cooled add in the milk and vanilla extract
- Add in the yogurt and mix all very well
- Gradually pour the wet ingredients to the dry ingredients and whisk together.
- Pour in the greased tin
- Bake for about 35-40 mins or until toothpick inserted and comes out clean
- For the cream:
- Cream together the ricotta cheese and butter until light and fluffy
- Add in the light brown sugar, cinnamon and the vanilla and combine
- When cake is cool... Cut through the middle equally and fill with you favourite jam
- Sandwich the cake together and spread the cream all over the top
- From there you can design if however you like...
- I sprinkled it with chocolate sprinkles
