Eggless Chocolate Cake

  1. Preheat the oven at 180 C degrees
  2. Grease a baking tin
  3. In a bowl sift together all the dry ingredients
  4. In a separate bowl whisk together the oil and hot water until well blended a let cool for a couple of mins
  5. When cooled add in the milk and vanilla extract
  6. Add in the yogurt and mix all very well
  7. Gradually pour the wet ingredients to the dry ingredients and whisk together.
  8. Pour in the greased tin
  9. Bake for about 35-40 mins or until toothpick inserted and comes out clean
  10. For the cream:
  11. Cream together the ricotta cheese and butter until light and fluffy
  12. Add in the light brown sugar, cinnamon and the vanilla and combine
  13. When cake is cool... Cut through the middle equally and fill with you favourite jam
  14. Sandwich the cake together and spread the cream all over the top
  15. From there you can design if however you like...
  16. I sprinkled it with chocolate sprinkles
