Avocado and Brie Sandwich with Caramelized Onions
- 2 slices (thick) French Style Country Bread
- 1 Tablespoon Unsalted Butter
- 1/2 cups Brie Cheese, Rind Removed
- 1/2 Tablespoons Canola Oil
- 1/2 whole Small Onion, Thinly Sliced
- 1 clove Garlic
- 2 Tablespoons Herbed Mayonnaise (optional)
- 1 whole Avocado, Mashed
- Salt To Taste
- 1 leaf Romaine Lettuce, Torn
- Preheat oven to 350 degrees F.
- Lightly butter French bread and place onto baking sheet in oven.
- You will want to lightly toast bread, not only for texture, but it also will help hold up to the softness of mashed avocado and brie.
- While bread toasts, add brie to a small baking dish and let it cook in oven, just until melted.
- To a small skillet, add canola oil and sliced onions.
- Cook on medium heat for about 15 minutes, just until onions soften and turn color.
- When toast is ready, rub both slices with garlic clove.
- Place herbed mayonnaise on top, then smear avocado on bread.
- Sprinkle with salt.
- Top with melted brie cheese, cooked onions, and then lettuce.
- Slice in half, and serve.
