Simple, Delicious Bruschetta

  1. Dice tomatoes, drain excess juice.
  2. Coarsley chop basil leaves (I use scissors).
  3. In a medium plastic or glass mixing bowl, combine tomatoes, garlic, olive oil, basil, salt and pepper.
  4. (Don't use a metal bowl because of the acid from the tomatoes.
  5. ).
  6. Cover with plactic wrap.
  7. Allow mixture to set for a few hours for best flavor.
  8. (Do not refrigerate, it will make the tomatoes mushy).
  9. Preheat broiler.
  10. Slice the baguette diagonally, about 3/4" thick, and place under broiler to toast on BOTH sides.
  11. You can do this in advance.
  12. Lay the toasted baguette slices on a pan or cookie sheet.
  13. With a slotted spoon, scoop the mixture onto each slice.
  14. Be sure to drain off any excess liquid to prevent sogginess.
  15. Top each slice with the shredded cheese and place under broiler immediately.
  16. Watch closely and broil for 3-6 minutes, until cheese is melted and tomatoes are warm.
  17. Enjoy immediately!
