Vickys Creamed Corn, Gluten, Dairy, Egg & Soy-Free
- 260 grams sweet corn
- 400 ml coconut milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 1 tbsp chopped spring onion
- 1 tbsp chopped chives/parsley
- Put the milk & corn in a pan and bring to a simmer
- Season with salt and pepper and cook for 15 minutes to reduce and thicken the milk
- Mix in the spring onions, pepper flakes and chives/parsley
- Season to taste and serve!
