Bronzed Catfish And Hush Puppies Recipe
- 18 ounce Catfish fillets, 6 ounces each
- 1/4 c. Butter or possibly margarine, melted
- 4 tsp Magic Seasoning Blends seafood magic, *Or possibly*
- 1 tsp Salt, onion pwdr, gr.red pepper, basil, each *AND*
- 1/2 tsp Garlic pwdr and thyme Lemon wedges
- 1 c. Cornmeal
- 1 c. All-purpose flour
- 1 Tbsp. Baking pwdr
- 2 tsp Magic Seasoning Blends seafood magic, *Or possibly*
- 3/4 tsp Grnd red pepper, and
- 1/2 tsp Salt, pepper, dry thyme, and
- 1/4 tsp White pepper, and
- 1/8 tsp Dry oregano leaves
- 1/4 c. Green onions - tops only, very finely minced
- 2 lrg Large eggs, beaten
- 1 c. Lowfat milk
- 2 Tbsp. Vegetable oil, + more for frying
- Prep time: 10 min;
- Cooking Time: 8 min; Degree of difficulty: Easy

- Brush both sides of fish with butter, then coat both sides with seasonings.
- 2.
- Heat 10-inch cast-iron skillet over medium-high heat till smoking, 3 to 5 min.
- Add in 2 fillets and cook till just opaque at center, about 2 min per side.
- Keep hot in oven and repeat with remaining fillets.
- Serve with lemon wedges and Hushpuppies.
- Makes 4 servings.
- Hush Puppies
- A great accompaniment to the catfish.
- Make these first and keep hot in a low oven while the fish cooks.
- Prep time: 10 min plus standing
- Cooking time: 5 min per batch
- Degree of difficulty: Easy

- Combine cornmeal, flour, baking pwdr and spices in large bowl.
- Stir in green onions.
- Add in Large eggs and blend well.

- Bring lowfat milk and oil to boil in small saucepan.
- Remove from heat and add in to flour mix in two batches, stirring well after each addition.
- Let stand 15 min.
- 3.
- Heat 4 inches oil to 350 F. in large saucepan or possibly deep fryer.
- Drop batter by tablespoonfuls into warm oil (don't crowd).
- Cook till dark golden and cooked through, about 2 1/2 min per side.
- Drain on paper towels.
- Keep hot while cooking remaining batter.
- Makes about 30.
- NOTES : Bronzed catfish is a lighter, faster, simpler version of the traditional blackened dish.
- Preheating your cast-iron skillet is essential.
- Use the Seafood Magic*Or possibly* the seasonings, not both.
