Bronzed Catfish And Hush Puppies Recipe

  4. Brush both sides of fish with butter, then coat both sides with seasonings.

  6. Heat 10-inch cast-iron skillet over medium-high heat till smoking, 3 to 5 min.

  8. Keep hot in oven and repeat with remaining fillets.

  13. Make these first and keep hot in a low oven while the fish cooks.

  15. Cooking time: 5 min per batch

  18. Combine cornmeal, flour, baking pwdr and spices in large bowl.
  19. Stir in green onions.
  20. Add in Large eggs and blend well.

  22. Bring lowfat milk and oil to boil in small saucepan.
  23. Remove from heat and add in to flour mix in two batches, stirring well after each addition.
  24. Let stand 15 min.

  26. Heat 4 inches oil to 350 F. in large saucepan or possibly deep fryer.
  27. Drop batter by tablespoonfuls into warm oil (don't crowd).
  28. Cook till dark golden and cooked through, about 2 1/2 min per side.
  29. Drain on paper towels.
  30. Keep hot while cooking remaining batter.
  31. Makes about 30.
  32. NOTES : Bronzed catfish is a lighter, faster, simpler version of the traditional blackened dish.
  33. Preheating your cast-iron skillet is essential.
