Diet Cookies Recipe

  1. Whip dry lowfat milk in ice water till stiff (4 to 5 min).
  2. Boil raisins in water for 2 min, drain.
  3. Reserve liquid for later use.
  4. Combine butter, sugar, egg and vanilla; beat 1 minute at medium speed.
  5. Sift together dry ingredients; add in liquid from raisins, add in dry ingredients.
  6. Beat 2 min at low speed.
  7. Stir in rolled oats and raisins, mix in lowfat milk.
  8. Drop from tsp.
  9. 2 inches apart on ungreased cookie sheet.
  10. Bake at 350 degrees for 15 to 20 min.
