Diet Cookies Recipe
- 1/4 c. non-fat dry lowfat milk
- 1/4 c. ice water
- 1/2 c. raisins
- 1/2 c. water
- 1/2 c. butter
- 1/2 c. brown sugar
- 1 egg
- 1 c. flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1 c. rolled oats
- 1/2 teaspoon salt
- Whip dry lowfat milk in ice water till stiff (4 to 5 min).
- Boil raisins in water for 2 min, drain.
- Reserve liquid for later use.
- Combine butter, sugar, egg and vanilla; beat 1 minute at medium speed.
- Sift together dry ingredients; add in liquid from raisins, add in dry ingredients.
- Beat 2 min at low speed.
- Stir in rolled oats and raisins, mix in lowfat milk.
- Drop from tsp.
- 2 inches apart on ungreased cookie sheet.
- Bake at 350 degrees for 15 to 20 min.
