Sweet Potato Dal

  1. On medium heat, heat the coconut oil in the pot and add the ground coriander, mustard seeds and chili flakes.
  2. Stir until mustard seeds begin to pop.
  3. Add the lentils, diced sweet potato, ginger, turmeric, and a pinch of salt.
  4. Stir the whole mixture to combine/coat in oil.
  5. Add the water.
  6. Simmer until the mixture is soupy.
