Two Onions, Pineapple and Olive Flatbread
- 1 pound pizza dough store-bought or homemade, enough for 2 people, or as needed
- 4 tablespoons olive oil with garlic and infused at low for 5 to 10 minutes
- 1/4 cup sundried tomatoes sliced or chopped, oil-packed and partially drained
- 2 each mushrooms, button sliced, or cremini
- 1/2 each green bell peppers slice into 1/4-inch thick
- 1/4 each red onion thinly slcied
- 1/4 each yellow onion thinly sliced
- 1/4 cup pineapple cut into small chunks
- 3 tablespoons kalamata olives pitted and sliced
- 1 clove garlic sliced
- 1 x salt and black pepper to taste
- 1 x olive oil for drizzling
- Preheat the oven to 450 F degree.
- Roll the pizza dough or bread dough into a 12-inch circle.
- Place the dough onto a pizza pan that's sprinkled with cornmeal.
- In a bowl, mix together all the topping ingredients.
- Drizzle about 2 tablespoons of olive oil, season with salt and black pepper to taste.
- Toss until evenly coated.
- Brush the garlic-infused olive oil evenly over the dough.
- Place the topping ingredients on top, and spread to cover the dough evenly.
- Bake until the shell is golden brown and the cheese is melted, about 15 minutes.
- Cool slightly and serve warm.
