Stir Fried Chicken with Cashew Nuts
- 1 thigh Chicken thigh meat - breast meat is ok too
- 40 grams Cashew nuts
- 1/2 medium Onion
- 1/2 Carrot
- 2 Bell peppers
- 1 pinch of each Salt and pepper
- 1/2 tbsp Vegetable oil
- 1 tbsp Oyster sauce
- 1 tsp Sugar
- 2 tbsp Sake
- 1 tbsp Soy sauce
- 1 tbsp Vinegar
- 1 tbsp Chicken soup stock granules
- 1 tbsp Katakuriko
- 1 tsp Sesame oil
- 50 ml Water
- Cut the chicken into 2 cm square pieces and season with salt and pepper.
- Cut the onion and bell peppers into 2 cm square pieces.
- Thinly slice the carrot and cut the slices into 2 cm pieces.
- Mix all the ingredients marked with together - oyster sauce, sugar, sake, soy sauce, vinegar, chicken stock granules, katakuriko, sesame oil and water.
- Put some oil into a frying pan, and stir fry the cashew nuts over medium heat.
- When they are lightly browned take them out.
- Put the chicken pieces in the same frying pan, and when they are lightly browned add the carrot and onion and stir-fry.
- When the onion is translucent add the bell peppers and the cashew nuts, and stir-fry lightly for about a minute.
- Add the ingredients and mix.
