Mediterranean Pesto Chicken & Orzo
- 1/2 cup each chopped fresh asparagus, red peppers and red onions
- 2 cups hot cooked orzo pasta
- 4 small boneless skinless chicken breasts (1 lb.)
- 1 tub (10 oz.) PHILADELPHIA Creamy Pesto Cooking Creme, divided
- 1 Tbsp. lemon zest
- Cook and stir vegetables in large nonstick skillet on medium heat 3 to 5 min.
- or until crisp-tender.
- Spoon into medium bowl; stir in orzo.
- Add chicken to skillet; cook 5 to 7 min.
- on each side or until done.
- Stir 3/4 cup cooking creme into orzo.
- Spoon remaining cooking creme into microwaveable bowl.
- Microwave on HIGH 30 sec.
- or just until warmed; stir.
- Spoon orzo mixture onto platter; top with chicken, warmed cooking creme and lemon zest.
