Hearty Baked Macaroni Recipe
- 1 (16 ounce.) can tomato paste
- 1 c. water
- 2 teaspoon Italian seasonings
- 1 teaspoon garlic pwdr
- 1 1/2 lbs. low fat cottage cheese
- 1/2 teaspoon onion pwdr
- 1 (8 ounce.) pkg. elbow macaroni, uncooked
- 4 ounce. Mozzarella cheese, sliced
- In a small bowl, combine tomato puree, water, Italian seasonings and 1/2 tsp.
- garlic pwdr.
- In another bowl, combine cottage cheese, onion pwdr and the remaining garlic pwdr.
- Spray a 9"x9"x2" casserole dish with vegetable cooking spray and spread 1/3 of the tomato mix in the dish.
- Layer 1/2 of the macaroni, all of the cheese mix and 1/3 of the tomato mix.
- Add in remaining macaroni and cover with remaining tomato mix.
- Cover and bake at 350 degrees for 1 hour.
- Uncover and top with Mozzarella cheese.
- Bake, uncovered till cheese melts, about 5 min.
- Let stand for 10 min before serving.
- Yield: 6 servings.
- Approximately 220 calories per serving.
