Ginger and Pineapple Spritzer

• 1 cup unsweetened pineapple juice
• 2 tablespoons coarsely chopped crystallized ginger
• 14 cup club soda
• 1 pineapple spear (optional)

1. Combine pineapple juice and ginger in a blender and blend until nearly smooth.
2. Strain into a tall glass over ice.
3. Stir in seltzer and garnish with a pineapple spear, if desired.
