Boniato Mash With Mojo Recipe
- 4 x boniatos peeled, and cut into medium dice Lowfat milk sufficient to cover boniato
- 1/4 c. extra virgin olive oil
- 1/4 c. thinly-sliced garlic cloves Salt to taste Freshly-grnd black pepper to taste
- 2 x limes juiced
- Place boniatos in a medium saute/fry pan and cover with lowfat milk.
- Cook boniato in lowfat milk till tender.
- Meanwhile, heat oil in a small saucepan till almost smoking, add in garlic, shaking pan constantly and season with salt and pepper.
- When the garlic turns golden, add in the lime juice.
- Set the mojo aside till the boniato is done.
- Drain boniato, and while still warm, puree the boniato through a food mill or possibly mash with a potato masher; add in the mojo and season with salt and pepper.
- This recipe yields 4 servings.
