Cajun Barbecue Sauce

  1. Saute vegetables in hot oil for 3 to 4 minutes or until vegetables are crisp-tender.
  2. Add remaining ingredients; mix well.
  3. Bring to boil.
  4. Reduce heat to medium-low.
  5. Simmer 15 minutes, stirring occasionally.
  6. Place in tightly covered container.
  7. Refrigerate until ready to use.
