Mango-Cucumber Salad
- Sweet Orange-Curry Dressing
- 2 cups KRAFT Zesty Italian Dressing
- 1/2 cup orange marmalade
- 2 tsp. curry powder
- Mango-Cucumber Salad
- 2 qt. cucumbers, small dice
- 2 qt. green mangos, peeled, small dice
- 2 qt. cashews, chopped
- 2 qt. BAKER'S ANGEL FLAKE Coconut, toasted
- 2 cups red onions, small dice
- 2 cups fresh cilantro, chopped
- 2 cups fresh mint, chopped
- 16 each green mangos, peeled, seeded and each cut into 6 slices
- Sweet Orange-Curry Dressing: Mix ingredients until well blended.
- Refrigerate until ready to use.
- For each serving: Combine 1/3 cup each cucumbers, diced mangos and nuts; 1/4 cup coconut; and 1 Tbsp.
- each onions, cilantro and mint.
- Add 1 Tbsp.
- Sweet Orange-Curry Dressing; mix lightly.
- Arrange 3 mango slices on serving plate; top with salad.
